What's Cookin Good Lookin? Greek Yogurt Baja Sauce



With summertime in full swing, we love light, fresh, easy dinners. Seafood is always a plus, too! Our current favorite stemmed from a really awesome Costco find: beer battered cod. We bake up a couple of the fillets and cook up some Mexican seasoned shrimp and bust out some yummy fish tacos with shredded cabbage, red onion, avocado and homemade Baja sauce.

It's a light dinner but super filling with the protein packed seafood in there! And the Baja sauce is added protein as I make it fresh with plain Greek yogurt! Traditionally it calls for a sour cream base, but you can make it healthier with Greek yogurt and not lose any of the flavor :)

My Baja sauce recipe is super easy!

1 1/2 cups of plain Greek yogurt (we like the Fage brand)
1/4 cup of chopped fresh cilantro
1 jalapeƱo, seeded and finely diced
Juice of 1/2 of a fresh lime (or more, if you prefer)
1-1 1/2 tsp of Mexican seasoning blend (McCormick makes a good one, or you can make your own blend via this Pinterest find!)

Mix everything in, adding the lime juice last. Stir well and set to chill in the fridge for at least 30 minutes (this will allow the flavors to meld). Enjoy!
